Hi, this is Dr.Hannah bringing you a healthy low fat recipe for split pea soup. I use yellow split peas because they have a milder flavor and a rich color. Split pea soup is a fantasitc soruce of protein, fiber, and iron. made with home made chicken stock, it helps fight the inflammation caused by colds and the flu. (recipe makes 8-10 ounce servings)
You will need:
- 1 tsp of unsalted butter
- 2 tsp of canola oil
- one 4 inch piece of leak
- two medium carrots
- two celery stalks
- 1/2 a cup of yellow split peas
- 3-4 fingerling potatoes
- 4 cups of chicken stock
- 4 cups of water
How to make it:
- Saute the butter, canola oil, leek, carrots, and celery
- Add the yellow split peas and potatoes after the other ingredients have “wilted” and saute for about 1-2 minutes
- Add your chicken stock and water to the veggies and stir together, then bring to a boil.
- Add salt and pepper to taste
- Lower it to simmer for about one hour.
